I bit-the-bullet and installed the FitCamX Dashcam today with my dad. Was a little fiddly but not too bad.
Observations:
* Very good camera quality.
* Seems to fit the EX30 exactly (looks like the model is shared with the Smart #1)
* The rear-view-mirror cover that needs removing has two annoying clips in the centre that sort of need to be pushed inwards to get the thing off
* It's the green plug that needs undoing, it has a clip that you have to press in to disconnect
* You can fairly easily run the wires up the back panel and avoid running them over the boot plastic
* You want to position the camera right on the will-it-fit plastic not the top of the back window. To start with I had it on the glass and the copper there is the DAB aerial which gets even worse reception if you put it there!
* I ran the wiring down the left hand side. Note the back window has the aerial and the camera does interfere if you have the radio playing (on a weak station) and move the camera close to the aerial wires on the glass the radio cuts out...

Using the smudger tool they give you. The trick I think is to get the cable under the roofing felt at the corners, then keep lifting / prying as you follow the corner around and push the cable down as you do so and it slips under the roof panel area.
I started at the edge, before the pillar corner, get the cable under, and continue linearly prying and working the cable in as you cross the pillar. As you've found it's impossible to do starting from the middle, say.

FYI Can confirm the rear camera impacts DAB radio *significantly*. By using a marginal station I moved it around and found I could get it to cut out completely or come back fully if the camera is moved full away. It looks like the copper at the top of the rear screen is the radio antenna.
So for 'best' reception I could achieve I moved the camera away from the window on the "will it fit' plastic and this has made the DAB stronger...

I took your advice and really worked on getting the cable round the corner and into the headlining and you were right, it then goes in much easier. You also inspired me to follow suit in removing the "Does it fit plastic" and running the wire up through the gromet and behind the plastic. Much nicer fit and thanks for tip about sticking the camera to the plastic rather than the glass.

I thought I’d add some photos of the wiring installed - ie you can’t tell if you’ve smudged them under the roof felt near the pillars
thanks to all for the pics and recommendations. Got ours last week and I had the FitCamX waiting. It does not seem to remember that I renamed it's WIFI but other than that it is great looking, good quality, looks OEM and was a doddle to fit (mine seemed to have a spare wiring loom I didn't need, maybe for if you have a rear view too? ) seems like a great bit of kit. Hopefully can forget it and will never need it, but nice to have just in case.
