It sets the inside lighting strips on the dash and doors etc - and remembers them - so if you like weird green, pale grey or naff blue you can select the appropriate one.
It is there as an alternative to the maps screen that you can use if you choose to. That is why it is there, as a decor choice that a few may like to use when they don't need the maps.
It probably does not have a default 'on' setting as even those who choose to use it don't use it that often.
It has audio to go with it too, if you don't want to use the radio.
And, as had been said, it controls the colour tone of the interior door and dash lighting

Thank you both. I had got that far by myself but I was expecting something cleverer such as automatically moving to ambiance on voice request or when parking is selected. But it simply appears to be a pretty way to adjust interior lights.
The EX30 doesn't go in for that - except for a very, very, very few basic functions!!!!
I have yet to see a definitive list of the available voice control functions. There could be many or few, who knows?
It would be good to know.
So far the only ones that I have found are:
Open Settings
Air-con heat settings
Switch on rear de-icer (heated rear window)
Navigation
Volume control
Make phone calls
Had anyone found any others?
